Choose maize flour that is fresh and free from lumps to absorbs water better and makes the dough easier to handle. It also improves the overall taste and aroma of the roti.

Many home cooks like stone-ground maize flour. It keeps natural flavor and nutrients. Using stone-ground maize flour is one of the best ways to prepare an authentic and delicious makki roti recipe.
