2medium tomatoes (finely chopped)
1–2 green chilies (optional)
1tbsp ginger-garlic paste
2tbsp oil or ghee
For Bhature
2cups all-purpose flour (maida)
2tbsp semolina (sooji, optional)
½ cup plain yogurt (curd)
½ tsp baking soda
½ tsp baking powder
1tsp sugar
½ tsp salt
1tbsp oil
Water (as needed to knead)
Oil (for deep frying)
Spices
1tsp cumin seeds
1tsp turmeric powder
1–2 tsp red chili powder
1tsp coriander powder
1tsp cumin powder
1tsp garam masala
1–2 tsp chole masala (optional but recommended)
Salt to taste

To make the chole, soak the chickpeas in water overnight. The next day, drain the water and cook the chickpeas in a pressure cooker with some fresh water and a little salt until they are soft.

Heat some oil in a pan and add chopped onions. Let them cook until golden brown. Once cooked add the chickpeas to the pan and carry on with your recipe. Use fresh water for cooking the chickpeas to get the best flavor. Also, be careful with the pressure cooker and hot oil so you do not have an accident.

Now we’re going to add ginger-garlic paste and cook for a minute. Add the chopped tomatoes, a little salt, coriander powder, chili powder and turmeric powder to the pan. Add everything together and cook until the mixture has thickened and the flavour have combined.

After adding the cooked chickpeas, mix thoroughly. To ensure that the flavors merge well, let it cook for a while.

To make bhature take flour in a bowl and add little salt, yogurt and baking soda. Mix well and add water slowly to form a soft dough. Cover and let dough rest for 2 to 3 hours.

Roll the dough into small balls and then roll out into circles. Heat oil in a deep pan and fry each rolled dough until it puffs up and becomes golden brown.

Serve the hot Chole with freshly fried bhatura. You can also add sliced onions, and lemon or pickles on the side. This is a very tasty and perfect for a special meal.
